the progress of AvenTINY is coming along nicely. the krausen level has fallen out, so it should be a tame looking next 10 days while it finishes fermenting in the 68° neighborhood. now it smells like rotten egg beer...a step up from the all-out sulfur bomb it was a couple days ago. still hoping that it completely fades away by the 3rd or 4th of April (anticipated bottling day).
Aley Cat is REALLY a good beer. I think I just about nailed that one. the flavors and mouthfeel are quite nice, and this is a HIGHLY drinkable pale ale. I really could not be happier that it ended up the way it has! that being said, I have tweaked my recipe for this one (well off in the future...too many other recipes to try!) to go with an actual bittering hop (such as Warrior) and save the rest of the Cascades for a dry hop addition. I can't see why this wouldn't be a hit...
