Beljamerican Pale AleIn lieu of a yeast starter, I crafted this hoppy pale ale to build up some Ardennes yeast and take advantage of (what I have read) its nicely balanced fruity and slightly spicy characteristics. This is a SPEEDY BREW DAY recipe that uses a 25-30 minute mash and only 20-25 minutes of boil time

For a 3.5 gallon batch:

* 5 lbs Pale Ale malt
* 1 lb White Wheat * 4 oz C-60 (would have preferred Caravienne, but didn't have any on hand) * 0.25 oz Bravo hops (~ 13.5% AA) @ 20 min * 0.4 oz each of Mosaic (10% AA) and El Dorado (13.5% AA) @ 10 min * 0.2 oz Citra (11% AA) @ 10 min * 3 day dry hop using all of them. I went with: 3/4 oz Bravo 1/2 oz Mosaic & ED 1/4 oz Citra * * Wyeast 3522 Ardennes slurry |
