After having a little European vacation a few months ago, my wife and I rekindled our love of Belgian beers (we spent our time in France, and these beers were prevalent and way cheaper than back here in the States!). We fondly remembered my Lo Ful de Kopf from a few years ago, so I wanted to have at that again. Rather than make a starter, I decided to run the gamut of Belgian beers. First a semi-hoppy pale ale: Beljamerican Pale Ale that would essentially get the yeast (I chose the Ardennes strain from Wyeast because we drank a LOT of Achouffe in France) ready for battle. Up next was B-Dubs and my first usage of Candi Syrup, and I think it went great because it tasted awesome going into the keg. Hopefully will know more around Easter. Then was a re-brew of Lo Ful de Kopf, and that is just about ready for kegging and conditioning. And to round it out: LBBP X (strong ale). This beer is in honor of my hitting 10 years of brewing this coming September. It's big (going to be 9.5-10% ABV) and dark and hopefully full of wonderful Belgian flavors. It's going to hang out in the fermenter a little bit longer, then have a nice long maturity time in a keg until I decide to tap it somewhere appropriate in September. Thanks for sticking with me guys. Talk to y'all soon!

was the winning recipe this morning. brew day went great, and all the tweaks are listed on its own new recipe page. check it out HERE
After an extremely long hiatus due to moving cross-country...the LBBP is back! to kick off things here at the new house, I brewed up a 4 gallon batch of Noble Spring, and a 1.25 gallon APA. Then I pulled a gallon from the pilsner and blended it in with the APA, and that is where the experiment currently is awaiting a result. the weather here has been going nutso, and the wine fridge that I ferment in is currently living in the garage, so its temperature is actually quite low...talking 43-45° low. so hopefully the 34/70 still does its job. the plan is to leave that alone for 7-10 days, then I will pull the fermenter and let it warm up a bit to finish out. the APA has wyeast 1968 going, and it's in the mid 60s. so minimal concerns there.
only time will tell, so I'll post back with updates when I've got 'em. until then, brew strong! it has been a very productive stretch here at the LBBP! Snowfall is on tap, made 3 different lagers, got, hopefully, Chocko-Porter right, and just because I missed it, I re-visited Weihen-Hefe yesterday. I didn't make a new page for it, but I got massive efficiency and this beast of an "Imperial" Hefe is going to, unintentionally, be clocking in over 6% ABV. That yeast cake is also ear-marked to re-brew Hopfenkuss and AvenTINY.
So keep stopping by, because there are going to be a bunch of updates in the coming weeks. in the meantime, brew strong everyone! Sinister Kitty will be hitting an empty keg this weekend (and should have a free tap within a week or 2), and Snowfall Bock will travel from the fermenter into some glass carboys (1 gallon sized because that is what fits in my fridge!) for some extended aging. You can count on updates to their recipe pages once the beers are tapped and tas
well, I've been brewing quite a bit of beer these past few weeks! there is the first round of the Dueling IPAs on tap, and it is dee-lish! I've been enjoying the evolution of flavors for about a week now, and it has been a little different each day. It's Columbus driven counterpart will be brewed in the not too distant future.
Also, the Project's first foray into brewing REAL lagerbier has been brewed and is lagering as I type this, while V2 is already in the fermenter. I hope to have a real taste before V3 hits the brew kettle Got word from assistant brewmaster Jewels LAST NIGHT, that Little Bastard beer was being talked up at a get together she was having with some of her colleagues...and could I make a special batch for one of them that was hosting a dinner party? Sure thing, so when is said party?
The 13th...of September... Someone was smiling down on the LBBP though, because her favorite beer, and her request: hefeweizen! so that gives me basically 18 days to go from grain to glass, and if there was ever a beer that could do it, it is this hefe. Made a 4 gallon batch (4 3/4 lbs wheat, 3 lbs pils, 3/4 oz Hallertau) because I was planning on making one to send to my in-laws in Texas anyway. so perfect timing! 2 oe 3 2L bottles for the party, 2 2L bottles to send...and a few bottles for at-home QC. I am hoping that nature will get this carbed up fast enough, but worst case scenario I can hit it with the carbonator cap. oh, got an OG of 1.052, the ABV will be about 5.1%, with about 12-13 IBU. couldn't have asked for a better brew day. well, my lager is taking a BIT longer than I anticipated to ferment out, so it is keeping my LBKs preoccupied...which is good and bad for sure. I really want to brew up a chocolate porter, and I've been craving another batch of Weihen-hefe! but they must wait their turn...
to all you guys that have checked this site out: thanks! I've received more kind words than I ever would have anticipated, and I am really happy to hear that my little brew log has helped many (you believe that?!?) people brew some quality beer! that is what this hobby is all about, and I'm glad that I/we can do our part! brew strong friends! |
